Harold's Heavenly Waffles

 

Ingredients

3 Eggs
1 cup Half & Half (add more to achieve consistency)
2 cups Bisquick
2 tbsp. cooking oil (or clarified butter)

Preparation

Heat waffle iron to medium heat (if adjustable).

Start by separating the eggs. Yolks into the mixing bowl and whites in a smaller bowl. Whip the whites until stiff and fluffy.

Add Half & Half and oil to yokes in mixing bowl and beat at medium high speed until creamy.

Add Bisquick slowly while beating at medium speed making sure all lumps are dissolved. Beat on high for about one minute.

Add stiffened egg whites and mix thoroughly at low speed.

Spray the irons with Pam, and pour in batter making sure it covers the bottom iron. Watch the steam rising from waffle iron. When it diminishes the waffle is done.

 

Note: the mix can be adjusted prior to adding the egg whites, thinner for waffles and thicker for pancakes. Most pancake mixes contain a mix of wheat and corn flour, and substituting one cup of pancake mix for one of the cups of Bisquick adds a country flavor.
